A quick note on fresh & filled pasta..

The recipes here are obviously just a tiny sample of the possibilities for fillings. Get creative with seasonal ingredients and subtle flavour combinations. Practice making, rolling and shaping fresh pasta and you’ll feel like a master in no time. Be aware that the geometry of pasta is for more than just looks, the various shapes and cuts all lend themselves to different sauces and/or textures of filling. Getting the right combination can lift your dishes to a whole other level. We’ll cover such topics in our upcoming Fresh Pasta lesson and discuss the benefits of various doughs. Exciting times.
